The Chef will work in collaboration with the Pavillon Traiteur team, led by Sylvain Godard, chef de cuisine and assisted by his pastry chef Philippe Rigaut. Together, they will merge their skills to design refined and daring menus, celebrating seasonal products as well as quality local ingredients. Thanks to his creativity, Chef Philippe Joannès will bring a new dimension to the menu by creating unique and personalized dishes.
An exemplary CAREER
Endowed with an exemplary career and driven by an overflowing passion for the culinary arts, Chef Philippe Joannès is emerging as a key personality within the French gastronomic scene. Since 1981, his career has been punctuated with success, and he brilliantly held various positions of responsibility within prestigious establishments in our capital, leaving an indelible mark everywhere.
From 2001 to 2012, as Executive Chef and Head of Operations at LENÔTRE, Chef Philippe Joannès was the architect of the triumph of the LENÔTRE Côte d'Azur laboratory, skilfully supervising a team of professionals. Subsequently, as Executive Chef at the Fairmont Monte Carlo hotel for 8 successful years, he set up the "Private Dining" catering division and orchestrated the management of the Fairmont's four restaurants.
From October 2018 to July 2023, as Director of Culinary Events Catering and banqueting within the Société des Bains de Mer, his role was in the management and coordination of the culinary and pastry brigades within the various points of restoration.
In September 2023, the CEO of Pavillon Traiteur, Fabrice Lavergne, expressed his pride in bringing together Chef Philippe Joannès and his team: This is a new step for our company and an honor to collaborate with the Chef Philippe Joannès.
